Terroir: The vineyards are predominantly situated on Kimmeridgian limestone, a calcareous clay rich in fossilized marine organisms. This soil structure contributes to the wine’s pronounced minerality and flinty notes. Climate is semi-continental. The estate is organic certified.

Alcohol: 12.5%
Winemaking: Alcoholic fermentation is conducted at controlled low temperatures (around 18°C) to preserve the delicate aromas and freshness of the Chardonnay grapes. Malolactic fermentation is carried out to soften the wine’s acidity, contributing to a rounder mouthfeel.
Aging: The wine is aged for 12 months in steel tanks. This method maintains the wines’ crispness and emphasizes their mineral character.
Notes: The nose is fresh and expressive, with aromas of green apple, lemon zest, and white flowers, accompanied by delicate hints of flint and wet stone reflecting the classic Chablis minerality. On the palate, the wine is crisp and lively, showcasing vibrant citrus fruits like grapefruit and lime, balanced by a taut acidity and a mineral backbone. The mouthfeel is clean and precise with a medium body.
The finish is refreshing and lingering, marked by subtle saline notes and a gentle touch of chalky minerality that leaves a pure, elegant impression.
